Coho Salmon, also known as Silver Salmon.
Coho is prized for its mild, versatile flavor and delicate yet flaky texture that melts in the mouth without being overly rich. This makes it an approachable favorite for a wide range of palates and cooking styles.
Known for their bright silver sides and energetic leaps, these fish are the acrobats of the salmon world. They spend ample time in the nutrient-rich ocean before their late-season return, developing a balanced layer of fat that keeps the meat moist and tender. The Coho is often considered the most versatile of the three species we harvest at Sleepy Bay—equally excellent grilled with fresh herbs, baked with light seasonings, pan-seared, or even prepared as ceviche. Its subtle sweetness pairs beautifully with bold accompaniments like fruit salsas, citrus glazes, or smoky barbecue rubs.
Coho Salmon are caught between July and September. They weigh 12 lb on average and range between 5-18 lbs. The large Silver Coho are the last to return to the Copper River and have been enjoyed for generations. Portions are roughly 6 oz each
